A processing plant in Colombia works with a co-product of chicken entrails, basically a soft product, with 75% moisture, material from the commercialization of whole chickens without cuts. The cooking and pressing of the raw material were hampered due to a lack of product structure.
The problem was successfully resolved with the use of Disc Continuous Digesters with lower speeds and larger exchange surfaces when compared to Equacooker continuous digesters.
It was possible to obtain a good frying quality without destroying the product’s structure. This also allowed to substantially improve the fat content obtained in the pressed material. Currently, the co-product of 500,000 birds is processed per day at the plant.
